Ingredients
Scale
- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 2 medium sweet potatoes, cubed (about 2 cups)
- 4 cups fresh spinach
- 1 large red onion, diced
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1/2 tsp cinnamon
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prep your ingredients: Wash and peel sweet potatoes; chop into bite-sized cubes. Dice the red onion and mince the garlic. Set aside spinach.
- Sauté the chicken: In a large skillet over medium heat, add olive oil. Season chicken with salt, pepper, thyme, and cinnamon. Cook for 5-6 minutes per side until golden brown and cooked through; remove from skillet.
- Cook vegetables: In the same skillet, add more olive oil if needed. Sauté onions and sweet potatoes for about 3-4 minutes until onions are translucent and sweet potatoes begin to soften.
- Combine ingredients: Return chicken to the skillet along with minced garlic. Stir gently and add a splash of water or broth. Cover and simmer on low for 10 minutes until sweet potatoes are tender.
- Finish with spinach: Fold in fresh spinach until wilted (about 2 minutes). Serve hot.
