  • 2 medium sweet potatoes, cubed (about 2 cups)

  • 1 large red onion, diced

  • 1 tsp dried thyme
  • 1/2 tsp cinnamon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash and peel sweet potatoes; chop into bite-sized cubes. Dice the red onion and mince the garlic. Set aside spinach.
  2. Sauté the chicken: In a large skillet over medium heat, add olive oil. Season chicken with salt, pepper, thyme, and cinnamon. Cook for 5-6 minutes per side until golden brown and cooked through; remove from skillet.
  3. Cook vegetables: In the same skillet, add more olive oil if needed. Sauté onions and sweet potatoes for about 3-4 minutes until onions are translucent and sweet potatoes begin to soften.
  4. Combine ingredients: Return chicken to the skillet along with minced garlic. Stir gently and add a splash of water or broth. Cover and simmer on low for 10 minutes until sweet potatoes are tender.
  5. Finish with spinach: Fold in fresh spinach until wilted (about 2 minutes). Serve hot.
