  • 2 cups butternut squash, cubed

  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add crumbled Italian sausage and cook until browned (about 5-7 minutes).
  2. Stir in diced onion and minced garlic; sauté until translucent.
  3. Add cubed butternut squash and cook for about 10 minutes until slightly tender.
  4. Meanwhile, cook pasta according to package instructions until al dente; drain.
  5. Combine cooked pasta with the sausage and squash mixture, then add fresh spinach and stir until wilted (2-3 minutes).
