  • 2 ripe bananas, mashed
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup whole milk (or milk alternative)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar (for filling)
  • Powdered sugar (optional glaze)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mash bananas until smooth and mix in melted butter.
  2. In another bowl, whisk together flour, sugar, baking powder, cinnamon, and salt. Gradually combine with the banana mixture.
  3. Knead dough gently on a floured surface until soft. Roll out into a rectangle about 1/4 inch thick.
  4. Spread softened butter on the dough, then sprinkle with brown sugar and more cinnamon.
  5. Roll tightly into a log shape and slice into 1-inch pieces.
  6. Place rolls in a greased baking pan and bake for 25–30 minutes until golden brown.
