  • 1 tsp vanilla extract
  • 1 large egg
  • 3.4 oz instant vanilla pudding mix

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, mash the bananas until creamy but slightly chunky.
  3. In another bowl, cream together softened butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
  4. Beat in the egg followed by the mashed bananas until well combined.
  5. In a separate bowl, whisk together flour, baking soda, salt, and pudding mix; gradually add to wet ingredients until just combined.
  6. Drop tablespoon-sized portions onto prepared baking sheets about two inches apart.
  7. Bake for 10-12 minutes or until edges are golden and centers remain soft.
