- 8 corn tortillas
- 2 cups red enchilada sauce (store-bought or homemade)
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Prepare your ingredients by dicing the onion and mincing the garlic.
- In a large skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
- Add ground beef to the skillet; cook until browned (7-10 minutes), breaking apart as it cooks. Drain excess fat if needed.
- Season with taco seasoning, salt, and pepper. Stir in half of the red enchilada sauce and simmer for about 5 minutes.
- Preheat oven to 350°F (175°C). Assemble enchiladas by filling each tortilla with beef mixture, rolling tightly, and placing seam-side down in a baking dish.
- Pour remaining sauce over enchiladas and sprinkle with shredded cheeses.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10-15 minutes until cheese is bubbly and golden.
