  • 2 lbs beef chuck roast, trimmed and cut into bite-sized pieces
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 8 oz fresh cremini mushrooms, sliced
  • 2 cups beef broth (low-sodium)
  • 1 cup sour cream (full-fat)
  • 2 tsp Dijon mustard
  • 1 tsp paprika (smoked if desired)
  • Salt & pepper to taste
  • 12 oz egg noodles

Instructions

  1. Trim excess fat from the beef chuck roast and cut it into bite-sized pieces; season generously with salt and pepper.
  2. Optional: In a skillet over medium heat, add oil and sauté diced onions until golden brown. Add minced garlic until fragrant.
  3. Transfer the seasoned beef into the slow cooker along with sautéed onions and garlic. Add sliced mushrooms, beef broth, Dijon mustard, and paprika.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  5. Stir in sour cream before serving over cooked egg noodles or rice.
