- 2 cups long-grain rice
- 4 cups chicken broth
- 14.5 oz can diced tomatoes
- 2 tbsp Cajun seasoning
Instructions
- Chop the onion and bell peppers; mince the garlic.
- In a large pot, heat olive oil over medium heat. Add seasoned chicken thighs and brown on both sides (about 6 minutes). Remove from pot.
- Sauté chopped onions and bell peppers in the same pot until softened (about 5 minutes). Add minced garlic for the last minute.
- Return chicken to the pot and add sliced sausage, rice, canned tomatoes (with juice), chicken broth, and Cajun seasoning. Bring to a boil.
