  • 1 cup fresh blueberries
  • 1 cup full-fat coconut milk
  • 2 cups water
  • 1/2 cup sweetener (sugar or honey)

Instructions

  1. Rinse the sago pearls under cold water until the water runs clear.
  2. Boil 2 cups of water in a pot, then add the rinsed sago pearls. Cook on medium-low heat for 10-15 minutes until translucent. Drain and set aside.
  3. In another saucepan, combine 1 cup of coconut milk and 1/2 cup sweetener over low heat, stirring until well mixed.
  4. Add the drained sago pearls and fresh blueberries to the coconut milk mixture, stirring gently to combine.
  5. Transfer to serving bowls and refrigerate for at least an hour before serving.
