Experience a delightful fusion of creamy burrata and sweet, caramelized tomatoes in this vibrant salad—perfect for summer gatherings or light lunches.


Ingredients

  • 8 oz burrata cheese
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange halved cherry tomatoes cut-side up on a parchment-lined baking sheet. Drizzle with olive oil, then season with salt and pepper.
  3. Roast the tomatoes for 20-25 minutes until blistered and caramelized.
  4. On a serving platter, layer fresh basil leaves and top with warm roasted tomatoes.
  5. Tear open the burrata cheese and place it among the tomatoes. Drizzle with additional olive oil and balsamic vinegar before serving.
