Butter chicken, or murgh makhani, is a beloved Indian dish that perfectly marries tender chicken pieces with a rich, creamy tomato sauce infused with aromatic spices. This recipe offers an easy way to bring the warm flavors of India to your table, making it ideal for weeknight dinners or special gatherings. With its velvety texture and delightful blend of spices, butter chicken promises to impress both family and guests alike.


Ingredients

⦁ 1.5 lbs boneless chicken thighs or breasts
⦁ 1 cup plain yogurt (Greek recommended)
⦁ 2 cups crushed tomatoes
⦁ 1 cup heavy cream
⦁ 4 tablespoons unsalted butter
⦁ Spices: garam masala, turmeric, cumin, coriander, red chili powder
⦁ 4 cloves garlic (minced)
⦁ 1-inch piece ginger (minced)


Instructions

1. Marinate chicken in yogurt mixed with garlic, ginger, and half the spices for at least 1 hour (preferably overnight).
2. Sauté marinated chicken in butter over medium-high heat until golden brown; set aside.
3. In the same skillet, add remaining butter and crushed tomatoes along with spices; simmer for 10-15 minutes.
4. Return chicken to the skillet and stir in heavy cream; simmer for another 10-15 minutes until the sauce thickens.
