  • 6 slices bacon, cooked and crumbled
  • 1/2 lb smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup chopped green onions
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients:
    • In a large mixing bowl, toss diced potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper.
  2. Assemble the Dish:
    • Lay out a large piece of aluminum foil (double layer for strength).
    • Spread the seasoned potatoes onto the foil, then top with sliced sausage and crumbled bacon.
  3. Cook Over the Campfire:
    • Fold and seal the foil tightly to create a packet.
    • Place the packet over hot campfire coals or on a grill at medium heat. Cook for 25–30 minutes, flipping occasionally, until the potatoes are tender.
  4. Add the Cheese:
    • Carefully open the foil packet and sprinkle cheddar and mozzarella cheese over the potatoes.
    • Reseal the foil and return to heat for 5–7 minutes, or until the cheese is melted and bubbly.
  5. Garnish and Serve:
