- 5 tbsp ice water
- 4 medium apples (Granny Smith or Honeycrisp), peeled and sliced
- ½ cup brown sugar
- 1 tsp cinnamon
- ¼ cup heavy cream for brushing
- For caramel: ½ cup brown sugar + ¼ cup heavy cream

- 1. Create the Dough: In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Gradually add ice water until dough holds together.
- 2. Chill the Dough: Wrap in plastic wrap and refrigerate for at least 30 minutes.
- 3. Prepare Apples: Toss apple slices with brown sugar and cinnamon in a large bowl.
- 4. Roll Out Dough: On a floured surface, roll out dough into a rough circle (12 inches). Transfer to a parchment-lined baking sheet.
- 5. Assemble & Bake: Pile apples in the center of the dough, fold the edges over slightly, brush with heavy cream, and bake at 375°F for 30-35 minutes.
- 6. Make Caramel Sauce: Simmer brown sugar and heavy cream until thickened. Drizzle over baked galette.
