- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups butternut squash, cubed
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 medium sweet onion, diced
- 3 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Wash and peel the butternut squash, cutting it into bite-sized cubes. Dice the onion and mince the garlic.
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Cook for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, add diced onion and cubed butternut squash. Stir occasionally for about 5 minutes until the onion is translucent. Add minced garlic near the end to avoid burning.
- Pour in uncooked orzo and chicken broth; stir well. Bring to a gentle boil, then reduce heat, cover tightly, and simmer for about 10 minutes or until orzo is tender.
- Return chicken to the skillet along with fresh spinach. Stir gently until spinach wilts down.
