  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups butternut squash, cubed
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1 medium sweet onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and peel the butternut squash, cutting it into bite-sized cubes. Dice the onion and mince the garlic.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Cook for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add diced onion and cubed butternut squash. Stir occasionally for about 5 minutes until the onion is translucent. Add minced garlic near the end to avoid burning.
  4. Pour in uncooked orzo and chicken broth; stir well. Bring to a gentle boil, then reduce heat, cover tightly, and simmer for about 10 minutes or until orzo is tender.
  5. Return chicken to the skillet along with fresh spinach. Stir gently until spinach wilts down.
