  • 4 oz fresh ramen noodles
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup carrots, thinly sliced
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil
  • Sriracha (optional)

Instructions

  1. Prepare all ingredients by chopping the chicken into bite-sized pieces and slicing the vegetables.
  2. Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and no longer pink, about 5-7 minutes.
  3. Add bell peppers, carrots, and minced garlic to the skillet. Stir-fry for another 3-4 minutes until vegetables soften slightly.
  4. Cook ramen noodles according to package instructions in a separate pot; drain well.
  5. Combine cooked noodles with the chicken and veggies in the skillet. Pour in soy sauce and sesame oil while tossing gently to coat.
