Instructions
- Preheat your oven to 225°F (110°C) and line two baking sheets with parchment paper.
- In a mixing bowl, beat egg whites on medium speed until foamy. Gradually add sugar and continue whipping until stiff peaks form and mixture is glossy.
- Gently sift in cocoa powder and fold into the meringue until well combined.
- Using a piping bag or spoon, dollop the meringue onto prepared baking sheets, shaping them into nests with wells in the center.
- Bake for approximately 1 hour 15 minutes until dry and crisp outside but slightly soft inside. Allow to cool completely.
