Instructions
- Preheat your oven to 300°F (150°C).
- Season the short ribs with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned (about 4 minutes per side). Remove and set aside.

- Add apple cider and beef broth to the pot, scraping any browned bits from the bottom. Stir in thyme.
- Return short ribs to the pot, ensuring they are submerged in liquid. Cover with a lid and braise in the oven for about 3 hours or until tender.
