  • 3 lbs beef short ribs
  • 2 cups apple cider
  • 1 large sweet onion, chopped
  • 4 garlic cloves, minced
  • 2 large carrots, sliced thick
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 cups low-sodium beef broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned (about 4 minutes per side). Remove and set aside.
  3. In the same pot, sauté chopped onions and carrots for about 5 minutes until softened. Stir in minced garlic and cook until fragrant.
  4. Add apple cider and beef broth to the pot, scraping any browned bits from the bottom. Stir in thyme.
  5. Return short ribs to the pot, ensuring they are submerged in liquid. Cover with a lid and braise in the oven for about 3 hours or until tender.
  6. Serve hot with mashed potatoes or crusty bread.
