  • ½ cup unsalted butter, melted

  • 1 cup sour cream
  • 2 tsp ground cinnamon
  • 2 cups Cinnamon Toast Crunch cereal (plus extra for topping)
  • 1 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs and melted butter until mixed; press into the bottom of the prepared pan.
  3. Beat cream cheese in a separate bowl until smooth. Gradually add sugar, then mix in sour cream, cinnamon, vanilla, and eggs one at a time until just incorporated.
  4. Pour filling over the crust and bake for 50-60 minutes until slightly jiggly in the center.
  5. Turn off the oven and leave the cheesecake inside for an hour to cool slowly.
  6. Chill in the refrigerator for at least four hours before serving. Top with additional crushed Cinnamon Toast Crunch when ready to serve.
