Instructions
- Bring a large pot of salted water to a rolling boil. Cook spaghetti according to package instructions until al dente (8-10 minutes).
- In a skillet over medium heat, cook diced pancetta until crispy (4-5 minutes). Remove from heat.
- In a bowl, whisk together eggs and grated Parmesan until smooth.
- Reserve ½ cup pasta water, then drain spaghetti and add it to the skillet with the pancetta (off heat).
- Quickly pour the egg mixture over the hot pasta and toss vigorously until creamy. If needed, add reserved pasta water to reach desired consistency.
