Ingredients

  • 1 1/2 cups shredded coconut (plus extra for rolling)
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • Pinch of salt

 


Instructions

  1. Mix Ingredients: In a bowl, combine shredded coconut, almond flour, honey, melted coconut oil, vanilla extract, and salt. Mix until a sticky dough forms.
  2. Form Balls: Scoop out small portions and roll into 1-inch balls.
  3. Coat with Coconut: Roll each ball in additional shredded coconut for a snowy finish.
  4. Chill: Place the balls in the fridge for at least 30 minutes to firm up before serving.

 

Notes
