  • 1 lb ground turkey or chicken
  • 1 cup full-fat coconut milk
  • 2 tbsp red or green curry paste
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • ¼ cup fresh cilantro or basil, chopped
  • 1 medium onion, diced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the ground meat with salt and pepper. Form into meatballs about 1 inch in diameter.
  2. Heat vegetable oil in a skillet over medium heat. Add diced onions and sauté until translucent (5-7 minutes).
  3. Stir in minced garlic and grated ginger; cook until fragrant (about 1 minute).
  4. Add the curry paste and stir well to coat the aromatics; let it cook down for an additional minute.
  5. Pour in the coconut milk and stir to combine. Bring to a simmer for about 5 minutes until slightly thickened.
  6. Gently add the meatballs into the sauce, cover, and simmer for 15-20 minutes until cooked through.
