- 1 medium green cabbage
- 3 large carrots

- low-sodium beef broth
Instructions
- Trim excess fat from the brisket and cut the cabbage into wedges. Slice the carrots into thick rounds.
- Heat oil in a large pot; sear the brisket until browned on all sides (about 5 minutes per side).
- Add enough beef broth to just cover the meat and toss in spices. Bring to a simmer.
- Cover tightly and cook on low heat for about 3 hours until fork-tender.
- In the last hour, add potatoes, carrots, and cabbage wedges to the pot.
- Once cooked, let rest briefly before slicing against the grain. Serve with mustard or horseradish.
