- 1 head green cabbage, cut into wedges
- 4 carrots, chopped
- 4 Yukon Gold potatoes, quartered
- Spices packet (mustard seeds, peppercorns)
- 6 cups beef broth or water
Instructions
- Rinse the corned beef under cold water and pat dry.
- Place the brisket in a large pot and surround it with chopped carrots and potatoes.
- Add cabbage wedges on top and sprinkle the spice packet over the ingredients.
- Pour in enough broth or water to cover the meat by 1 inch.
- Bring to a boil over medium-high heat, then reduce to low, cover tightly, and simmer for about 3 hours until tender.
- Remove the brisket, let it rest for 10 minutes before slicing against the grain. Serve with vegetables.
