Ingredients

  • 34 lbs brisket of corned beef
  • 1 head green cabbage, cut into wedges
  • 4 carrots, chopped
  • 4 Yukon Gold potatoes, quartered
  • Spices packet (mustard seeds, peppercorns)
  • 6 cups beef broth or water

Instructions

  1. Rinse the corned beef under cold water and pat dry.
  2. Place the brisket in a large pot and surround it with chopped carrots and potatoes.
  3. Add cabbage wedges on top and sprinkle the spice packet over the ingredients.
  4. Pour in enough broth or water to cover the meat by 1 inch.
  5. Bring to a boil over medium-high heat, then reduce to low, cover tightly, and simmer for about 3 hours until tender.
  6. Remove the brisket, let it rest for 10 minutes before slicing against the grain. Serve with vegetables.
