  • 8 oz rotini pasta
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 cup bell peppers (mixed colors), diced
  • 1 avocado, diced (add just before serving)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 tbsp extra virgin olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water for 8-10 minutes until al dente. Drain and cool under cold water.
  2. While the pasta cools, prepare the vegetables: dice bell peppers and red onion, halve cherry tomatoes, and chop cilantro.
  3. In a large bowl, combine cooled pasta with black beans, corn, diced vegetables, and cilantro. Gently mix to avoid mashing the avocado.
  4. Drizzle lime juice and olive oil over the mixture. Sprinkle with cumin and chili powder; toss gently to combine.
  5. Chill in the refrigerator for at least one hour before serving to allow flavors to meld.
