- 8 oz rotini pasta
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 cup bell peppers (mixed colors), diced
- 1 avocado, diced (add just before serving)
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 3 tbsp extra virgin olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water for 8-10 minutes until al dente. Drain and cool under cold water.
- While the pasta cools, prepare the vegetables: dice bell peppers and red onion, halve cherry tomatoes, and chop cilantro.
- In a large bowl, combine cooled pasta with black beans, corn, diced vegetables, and cilantro. Gently mix to avoid mashing the avocado.
- Drizzle lime juice and olive oil over the mixture. Sprinkle with cumin and chili powder; toss gently to combine.
- Chill in the refrigerator for at least one hour before serving to allow flavors to meld.
