  • 1 cup bell peppers, diced (mixed colors)
  • 2 medium russet potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium beef broth
  • 1 cup corn (frozen or canned)
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat with a splash of oil. Sauté chopped onions and minced garlic until soft and fragrant (about 3-4 minutes).
  2. Increase heat slightly and add ground beef. Cook until browned (approximately 5-6 minutes), breaking it up as it cooks.
