  • 1/2 cup breadcrumbs (plain or Italian)
  • 1/4 cup fresh parsley (chopped)
  • 1 cup cranberry sauce (whole-berry)
  • 1/4 cup orange juice (freshly squeezed)
  • Zest of 1 orange
  • 2 tbsp soy sauce
  • 1/4 cup honey
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • Red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix ground beef, breadcrumbs, parsley, salt, and pepper until just combined.
  3. Roll the mixture into golf ball-sized meatballs and place them on a lined baking sheet.
  4. Bake for 20 minutes until browned.
  5. Meanwhile, whisk together cranberry sauce, orange juice, honey, soy sauce, Dijon mustard, and garlic powder in a saucepan over medium heat until combined.
  6. Toss baked meatballs in the glaze and simmer for 5 minutes on low heat.
  7. Serve hot on a platter, garnished with extra parsley if desired.
