  • 1 cup fresh or frozen cranberries
  • 4 oz ramen noodles (fresh or dried)
  • 4 cups low-sodium vegetable broth
  • 2 green onions, sliced (white and green parts)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 2 soft-boiled eggs (optional)

Instructions

  1. In a large pot, combine vegetable broth, grated ginger, and soy sauce. Heat over medium until fragrant.
  2. Add cranberries and sliced turkey to the pot; cook for about 5 minutes until cranberries burst.
