Ingredients

  • 1 sheet puff pastry (thawed)
  • 2 cups fresh kale (chopped)
  • 4 oz goat cheese (crumbled)
  • 1/2 cup heavy cream
  • 1 tbsp olive oil
  • 2 cloves fresh garlic (minced)
  • Zest of 1 lemon
  • 2 tbsp crispy capers (fried)
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry to fit a tart pan, trimming excess.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add chopped kale, cooking until wilted (about 5 minutes). Season with salt and pepper.
  3. In a bowl, combine sautéed kale with goat cheese, heavy cream, and lemon zest. Mix well and spoon into the pastry shell.
  4. Fry capers in olive oil until golden brown (2-3 minutes), then scatter over the tart filling.
  5. Bake for 25-30 minutes until the pastry is golden brown. Let cool slightly before slicing.
