  • 2 cups butternut squash (peeled and cubed)
  • 1 lb gnocchi (store-bought)
  • 1 lb Italian sausage (casings removed)
  • 2 tsp fresh thyme (chopped)
  • 2 tsp fresh sage (chopped)
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (freshly grated)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  2. In a large skillet over medium heat, cook sausage until browned, about 5-7 minutes.
  3. Lower heat; add heavy cream, roasted butternut squash, thyme, and sage to the skillet. Stir and heat for 3-5 minutes.
  4. Cook gnocchi in salted boiling water according to package instructions; drain.
  5. Add cooked gnocchi to the skillet along with Parmesan cheese; stir until well combined.
