  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 12 oz rotini pasta
  • 2 cups fresh spinach (optional)
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet over medium heat, melt butter until bubbly.
  2. Sear chicken for 6-7 minutes on each side until golden brown. Remove and set aside.

  5. Cook rotini according to package instructions; drain and reserve some pasta water.
  6. Return rotini to the skillet along with sliced chicken; mix until well-coated, adding reserved pasta water if too thick.
  7. Serve garnished with extra Parmesan or fresh herbs.
