This creamy garlic pasta is a quick and delicious one-pot meal perfect for busy weeknights. Packed with rich, garlicky flavor and velvety sauce, it’s comfort food at its finest.
Ingredients
Scale
- 12 oz pasta (spaghetti, fettuccine, or penne)
- 4 garlic cloves, minced
- 2 cups heavy cream (or coconut cream for dairy-free)
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter or olive oil
- 1/2 tsp red chili flakes (optional)
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
- Make the Sauce:
- In the same pot, heat butter or olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1-2 minutes).
- Pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan cheese and mix until smooth.
- Combine:
- Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, add a splash of reserved pasta water. Season with salt, black pepper, and red chili flakes, if desired.
- Serve:
- Transfer to plates, garnish with fresh parsley, and enjoy warm.
Notes
- For a protein boost, add grilled chicken or shrimp.
- Substitute heavy cream with cashew cream for a vegan version.
- Store leftovers in an airtight container in the fridge for up to 3 days.
