Description

This hearty and creamy hamburger potato soup is packed with seasoned ground beef, tender potatoes, and a rich, cheesy broth. It’s the ultimate comfort food for chilly nights or family dinners!

 


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 medium potatoes, peeled and diced
  • 3 cups chicken or beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Optional garnish: chopped green onions or parsley

Instructions

  1. Cook the Beef:
    • In a large pot, heat olive oil over medium heat. Add the ground beef, season with salt and pepper, and cook until browned. Remove and set aside.
  2. Sauté Aromatics:
    • In the same pot, sauté onions until soft, then add garlic and cook for 1 minute until fragrant.
  3. Simmer Potatoes:
    • Add diced potatoes, broth, paprika, and thyme. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  4. Create the Creamy Base:
    • Using a potato masher, mash some of the potatoes in the pot to thicken the soup. Stir in heavy cream, shredded cheddar, and sour cream.
  5. Combine & Serve:
    • Add the cooked ground beef back into the pot and stir until heated through. Adjust seasoning if needed. Garnish with green onions or parsley and serve hot.

Notes

  • For added flavor, sprinkle crispy bacon bits on top before serving.
  • Use ground turkey or chicken for a lighter version.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
