- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 4 medium potatoes, peeled and diced
- 3 cups chicken or beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Optional garnish: chopped green onions or parsley
Instructions
- Cook the Beef:
- In a large pot, heat olive oil over medium heat. Add the ground beef, season with salt and pepper, and cook until browned. Remove and set aside.
- Sauté Aromatics:
- In the same pot, sauté onions until soft, then add garlic and cook for 1 minute until fragrant.
- Simmer Potatoes:
- Add diced potatoes, broth, paprika, and thyme. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Create the Creamy Base:
- Using a potato masher, mash some of the potatoes in the pot to thicken the soup. Stir in heavy cream, shredded cheddar, and sour cream.
- Combine & Serve:
- Add the cooked ground beef back into the pot and stir until heated through. Adjust seasoning if needed. Garnish with green onions or parsley and serve hot.
Notes
- For added flavor, sprinkle crispy bacon bits on top before serving.
- Use ground turkey or chicken for a lighter version.
