  • 1 lb sweet or spicy Italian sausage
  • 2 ripe Bosc or Anjou pears, diced
  • 1 cup heavy cream
  • 1/2 cup grated fresh Parmesan cheese
  • 2 cups fresh spinach or arugula
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain, reserving some pasta water.
  2. In a skillet over medium heat, add olive oil and crumble in the sausage. Cook until browned (7-10 minutes).
  3. Stir in minced garlic; sauté until fragrant (about 1 minute). Add diced pears; cook until slightly caramelized (3-4 minutes).
  4. Reduce heat; pour in heavy cream while stirring continuously. Season with salt and pepper.
  5. Toss the cooked pasta into the skillet; add reserved pasta water if needed for desired consistency. Fold in spinach or arugula until wilted.
