Ingredients

Scale
  • 8 oz fettuccine or penne pasta
  • 1 cup jarred roasted red peppers, chopped
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep all ingredients: chop garlic and basil.
  2. Cook pasta in salted boiling water until al dente; reserve 1/2 cup pasta water.
  3. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant (about 1 minute), then add roasted red peppers and heat through.
  4. Pour in heavy cream and simmer gently for 5 minutes until slightly thickened.
  5. Gradually whisk in Parmesan cheese until melted and smooth. If too thick, add reserved pasta water until desired consistency.
  6. Toss cooked pasta in the sauce, ensuring it's well coated. Season with salt and pepper to taste.
