  • 34 boneless, skinless chicken breasts (1 lb)
  • 8 oz fettuccine pasta
  • 1 cup oil-packed sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 cups fresh spinach (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and season chicken breasts with salt and pepper. Cook for about 5-7 minutes per side until golden brown and cooked through. Remove from skillet and slice.
  3. In the same skillet, add minced garlic and chopped sun-dried tomatoes; sauté for 2-3 minutes until fragrant.
  4. Pour in heavy cream and stir in Parmesan cheese until melted and smooth.
  5. Toss in the cooked fettuccine, sliced chicken, and fresh spinach (if using). Gently combine until spinach wilts slightly.
  6. Serve immediately, garnished with extra Parmesan or fresh basil if desired.
