Ingredients

Scale
  • 1 pound large shrimp (peeled and deveined)
  • 1 cup unsweetened coconut flakes
  • 1/2 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup sweet chili sauce (for dipping)

Instructions

  1. Set up three bowls: one for the flour mixed with salt and pepper, one for the beaten eggs, and one for the coconut flakes.
  2. Dip each shrimp in the flour mixture, then coat in the egg wash, followed by rolling it in coconut flakes until fully covered.
  3. Heat about 1 inch of oil in a frying pan over medium-high heat until shimmering.
  4. Carefully fry the coated shrimp in batches for about 2-3 minutes on each side until golden brown.
  5. Remove from oil using a slotted spoon and drain on paper towels to keep them crispy.
  6. Serve hot with sweet chili sauce for dipping.
