- 1 can (15 oz) fire-roasted diced tomatoes
- 1 can (15 oz) black beans, rinsed
- 1 can (15 oz) kidney beans, rinsed
- 2 cups low-sodium chicken or vegetable broth
- 1 packet taco seasoning (or homemade)
- 1 cup frozen corn
- 1 cup bell peppers, chopped (any color)
- 1 medium onion, chopped
Instructions
- In a skillet over medium heat, brown the ground meat until fully cooked (6-8 minutes). Drain excess fat.
- Sauté chopped onions and bell peppers in the same skillet for about 5 minutes until softened.
- Transfer browned meat and vegetables to a Crock Pot. Add tomatoes (with juice), beans (rinsed), corn, taco seasoning, and broth. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, taste and adjust seasoning if necessary.
