  • 1 lb lean ground beef or turkey
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 1 can (15 oz) kidney beans, rinsed
  • 2 cups low-sodium chicken or vegetable broth
  • 1 packet taco seasoning (or homemade)
  • 1 cup frozen corn
  • 1 cup bell peppers, chopped (any color)
  • 1 medium onion, chopped

Instructions

  1. In a skillet over medium heat, brown the ground meat until fully cooked (6-8 minutes). Drain excess fat.
  2. Sauté chopped onions and bell peppers in the same skillet for about 5 minutes until softened.
  3. Transfer browned meat and vegetables to a Crock Pot. Add tomatoes (with juice), beans (rinsed), corn, taco seasoning, and broth. Stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, taste and adjust seasoning if necessary.
