  • 1 lb lean ground beef (80/20)
  • 2 tbsp taco seasoning
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked, about 5-7 minutes.
  2. Stir in taco seasoning and a splash of water; let simmer for a few minutes.
  3. In the crockpot, combine browned beef, uncooked spaghetti, diced tomatoes (with juice), drained black beans, and any additional veggies if desired.
  4. Pour enough water or broth over the mixture to just cover it.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 15 minutes before serving, sprinkle cheese on top and cover until melted.
