- 8 oz rotini pasta
- 1 cup diced fresh cucumbers
- 1 cup halved cherry tomatoes
- 1/4 cup finely chopped red onion
- 1/4 cup fresh basil or parsley, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
- While the pasta cools, dice the cucumbers and halve the cherry tomatoes. Finely chop the red onion.
- In a large mixing bowl, combine cooled pasta with cucumbers, tomatoes, and onion. Gently toss to mix.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and mix well.
- Add fresh herbs and give one last gentle toss before chilling in the refrigerator for at least 30 minutes.
