Ingredients

  • 8 oz rotini pasta
  • 1 cup diced fresh cucumbers
  • 1 cup halved cherry tomatoes
  • 1/4 cup finely chopped red onion
  • 1/4 cup fresh basil or parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cools, dice the cucumbers and halve the cherry tomatoes. Finely chop the red onion.
  3. In a large mixing bowl, combine cooled pasta with cucumbers, tomatoes, and onion. Gently toss to mix.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and mix well.
  5. Add fresh herbs and give one last gentle toss before chilling in the refrigerator for at least 30 minutes.
