- 1 medium yellow onion, diced
- 2 tbsp curry powder
- 1 cup full-fat coconut milk
- 1 cup frozen peas and carrots
- 2 sheets puff pastry (thawed if frozen)
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 400°F (200°C). Chop the chicken into bite-sized pieces. Dice the onion and mince the garlic.
- In a large skillet, heat olive oil over medium heat. Sauté the onions until translucent (3-4 minutes), then add minced garlic for an additional minute.
- Add the chopped chicken along with curry powder, salt, and pepper. Cook until browned and fully cooked (5-7 minutes).
- Pour in coconut milk and stir in frozen peas and carrots; simmer for about 5 minutes.
- Roll out one puff pastry sheet in a baking dish, pour in the filling, cover with another pastry sheet, crimp edges to seal, and cut slits in the top for steam escape.
- Optionally brush with egg wash for a golden finish. Bake for 25-30 minutes until golden brown and bubbly.
