  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium yellow onion, diced
  • 2 tbsp curry powder
  • 1 cup full-fat coconut milk
  • 1 cup frozen peas and carrots
  • 2 sheets puff pastry (thawed if frozen)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 400°F (200°C). Chop the chicken into bite-sized pieces. Dice the onion and mince the garlic.
  2. In a large skillet, heat olive oil over medium heat. Sauté the onions until translucent (3-4 minutes), then add minced garlic for an additional minute.
  3. Add the chopped chicken along with curry powder, salt, and pepper. Cook until browned and fully cooked (5-7 minutes).
  4. Pour in coconut milk and stir in frozen peas and carrots; simmer for about 5 minutes.
  5. Roll out one puff pastry sheet in a baking dish, pour in the filling, cover with another pastry sheet, crimp edges to seal, and cut slits in the top for steam escape.
  6. Optionally brush with egg wash for a golden finish. Bake for 25-30 minutes until golden brown and bubbly.
