Description

Bird’s Nest Cupcakes are delightful chocolate treats topped with coconut nests and mini eggs, perfect for bringing smiles to spring celebrations.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/3 cup unsalted butter, melted
  • 1/2 cup chocolate frosting (store-bought or homemade)
  • 1 cup sweetened coconut flakes, toasted
  • 12 mini chocolate eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and sugar until combined.
  3. In another bowl, beat eggs and buttermilk until smooth; stir in melted butter.
  4. Gradually mix wet ingredients into dry ingredients until just blended.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely on wire racks before frosting.
  7. Spread chocolate frosting on each cupcake, sprinkle with toasted coconut flakes, and top with mini chocolate eggs.
