Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a bowl, whisk together flour, cocoa powder, baking powder, and sugar until combined.
- In another bowl, beat eggs and buttermilk until smooth; stir in melted butter.
- Gradually mix wet ingredients into dry ingredients until just blended.
- Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
- Allow cupcakes to cool completely on wire racks before frosting.
- Spread chocolate frosting on each cupcake, sprinkle with toasted coconut flakes, and top with mini chocolate eggs.
