  • 24 Oreo cookies, crushed
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature
  • ½ cup mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix crushed Oreos with melted butter and press into the bottom of a springform pan.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla.
  3. Add eggs one at a time, mixing gently after each addition. Fold in chopped Oreos and chocolate chips if using.
  4. Pour the filling over the crust and bake for 50-60 minutes until set but slightly jiggly in the center.
  5. Turn off the oven and let the cheesecake cool inside for an hour before refrigerating for at least four hours or overnight.
