Ingredients

  • 2 chicken breasts, sliced into strips
  • 2 cups pasta (penne or fettuccine)
  • 1 cup mushrooms, sliced
  • 1/2 cup Marsala wine
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook Pasta: Boil pasta in salted water until al dente. Drain and set aside.
  2. Cook Chicken: In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then sauté until golden and cooked through. Remove and set aside.
  3. Sauté Mushrooms: In the same skillet, add garlic and mushrooms. Sauté until softened.
  4. Prepare Sauce: Deglaze the pan with Marsala wine, then add chicken broth and simmer for 2 minutes. Stir in heavy cream and Parmesan cheese, cooking until the sauce thickens.
  5. Combine: Add chicken and pasta back into the skillet. Toss until fully coated in the sauce.
  6. Serve: Garnish with parsley and extra Parmesan before serving.

Notes

  • Substitute Marsala wine with chicken broth if preferred.
  • For extra flavor, add a sprinkle of crushed red pepper flakes.
  • Store leftovers in the refrigerator for up to 2 days.
