- 2 cups carrots, chopped
- 2 cups potatoes, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix garlic, rosemary, thyme, lemon zest, olive oil, salt, and pepper to create a paste.
- Score the fat on the leg of lamb and rub the herb mixture all over it.
- Arrange chopped carrots and potatoes around the lamb in a roasting pan.
- Roast for about 1 hour or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Let rest before carving and serving hot with vegetables.
