Description

Indulge in the tender, flavorful delight of herb-crusted roasted lamb, perfect for family gatherings and special occasions.


Ingredients

  • 1 bone-in leg of lamb (about 5 lbs)
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme leaves
  • 6 garlic cloves, minced
  • Zest of 1 lemon
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • 2 cups carrots, chopped
  • 2 cups potatoes, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix garlic, rosemary, thyme, lemon zest, olive oil, salt, and pepper to create a paste.
  3. Score the fat on the leg of lamb and rub the herb mixture all over it.
  4. Arrange chopped carrots and potatoes around the lamb in a roasting pan.
  5. Roast for about 1 hour or until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Let rest before carving and serving hot with vegetables.
