- 6 cups chicken or beef broth
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) tomato sauce
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Cook the Meat and Vegetables:
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain any excess fat.
- Add diced onion and garlic, cooking until softened. Stir in Italian seasoning, red pepper flakes, salt, and pepper.
- Add Broth and Tomatoes:
- Pour in the chicken or beef broth, diced tomatoes, and tomato sauce. Bring to a boil, then reduce heat to a simmer.
- Cook the Pasta:
- Add broken lasagna noodles to the pot and cook until tender, about 10 minutes, stirring occasionally.
- Prepare the Cheese Topping:
- In a small bowl, mix ricotta cheese, Parmesan, and a pinch of salt.
- Serve:
- Ladle soup into bowls, top with a dollop of the ricotta mixture, and sprinkle with shredded mozzarella. Garnish with fresh basil.
