Description

Enjoy the comforting flavors of classic lasagna in a bowl! This Lasagna Soup is hearty, cheesy, and perfect for a cozy family dinner.

Ingredients

Scale
  • 1 tbsp olive oil
  • 1 lb ground beef (or Italian sausage)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 6 cups chicken or beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) tomato sauce
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook the Meat and Vegetables:
    • Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain any excess fat.
    • Add diced onion and garlic, cooking until softened. Stir in Italian seasoning, red pepper flakes, salt, and pepper.
  2. Add Broth and Tomatoes:
    • Pour in the chicken or beef broth, diced tomatoes, and tomato sauce. Bring to a boil, then reduce heat to a simmer.
  3. Cook the Pasta:
    • Add broken lasagna noodles to the pot and cook until tender, about 10 minutes, stirring occasionally.
  4. Prepare the Cheese Topping:
    • In a small bowl, mix ricotta cheese, Parmesan, and a pinch of salt.
  5. Serve:
    • Ladle soup into bowls, top with a dollop of the ricotta mixture, and sprinkle with shredded mozzarella. Garnish with fresh basil.

Notes

  • Make it Creamy: Add 1/4 cup heavy cream for a richer broth.
  • Vegetarian Option: Use plant-based meat or additional vegetables like zucchini and mushrooms.
  • Leftovers: Store in the refrigerator for up to 3 days; reheat with additional broth if it thickens.
