- 2 large chicken breasts (sliced thinly)
- 2 tbsp olive oil
- 2 tsp garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/3 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 tsp Italian seasoning
- 1/4 tsp red chili flakes (optional)
- 8 oz pasta (fettuccine or penne)
- Fresh basil leaves for garnish
- Salt and pepper to taste
Instructions
- Cook the Pasta:
- Boil the pasta in salted water according to package instructions. Drain and set aside.
- Cook the Chicken:
- Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then sear until golden brown and cooked through (about 4–5 minutes per side). Remove and set aside.
- Make the Sauce:
- In the same skillet, sauté garlic until fragrant. Add the chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, Italian seasoning, and chili flakes. Simmer for 5–7 minutes until the sauce thickens.
- Combine & Serve:
- Slice the chicken and return it to the skillet. Toss in the cooked pasta to coat in the creamy sauce. Garnish with fresh basil and serve immediately.
Notes
- For extra flavor, add a splash of white wine to the sauce.
- Substitute heavy cream with coconut cream for a dairy-free option.
- Use gluten-free pasta if needed.
