Ingredients

  • 1 lb baby potatoes
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh chives, chopped
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash baby potatoes and toss with olive oil, salt, and pepper. Place on a baking sheet.
  2. Roast for 25-30 minutes until fork-tender and golden brown. Let cool slightly.
  3. Cut each potato in half lengthwise and scoop out some flesh into a bowl.
  4. Mix the scooped potato with mayonnaise, mustard, chives, paprika, salt, and pepper until well blended.
  5. Fill each potato half with the creamy mixture using a piping bag or spoon.
  6. Top with extra paprika and chives before serving.
