Ingredients

  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 1 cup long-grain white rice
  • 1 cup tzatziki sauce
  • 2 tbsp fresh lemon juice
  • 2 cups low-sodium chicken broth
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray a baking dish with nonstick cooking spray.
  3. Spread the rice evenly in the baking dish and pour in the chicken broth until it just covers the rice.
  4. Season chicken breasts with salt, pepper, and oregano, then place them on top of the rice.
  5. Drizzle tzatziki sauce over each chicken breast and squeeze fresh lemon juice on top.
  6. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  7. Remove foil and bake for an additional 10-15 minutes until chicken is golden brown.
