- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 2 cloves fresh garlic, minced
- 1 medium red onion, diced
- 1 green bell pepper, diced
- 1 cup enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese blend (Monterey Jack and cheddar)
- 2 tablespoons olive oil
- ½ cup sour cream or Greek yogurt for topping
Instructions
- Preheat the oven to 375°F (190°C).
- Dice the chicken into bite-sized pieces. Chop the garlic, onion, and bell pepper.
- In a large skillet over medium heat, heat olive oil. Add the onion and garlic; sauté until translucent (about 3 minutes). Add the chicken; cook until no longer pink (5-7 minutes).
- Stir in bell pepper and half of the enchilada sauce until well mixed.
- Spoon filling onto each tortilla and roll tightly. Place seam-side down in a greased baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and top with cheese.
- Bake for 20-25 minutes until bubbly and golden brown.
