  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 2 cloves fresh garlic, minced
  • 1 medium red onion, diced
  • 1 green bell pepper, diced
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese blend (Monterey Jack and cheddar)
  • 2 tablespoons olive oil
  • ½ cup sour cream or Greek yogurt for topping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Dice the chicken into bite-sized pieces. Chop the garlic, onion, and bell pepper.
  3. In a large skillet over medium heat, heat olive oil. Add the onion and garlic; sauté until translucent (about 3 minutes). Add the chicken; cook until no longer pink (5-7 minutes).
  4. Stir in bell pepper and half of the enchilada sauce until well mixed.
  5. Spoon filling onto each tortilla and roll tightly. Place seam-side down in a greased baking dish.
  6. Pour remaining enchilada sauce over the rolled tortillas and top with cheese.
  7. Bake for 20-25 minutes until bubbly and golden brown.
