  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain jasmine rice
  • 1 cup fresh cilantro
  • 4 garlic cloves
  • 2 tbsp freshly squeezed lime juice
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 green chili peppers (adjust for spice)
  • 2 cups chicken broth

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, lime juice, cumin, paprika, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Cook the Chicken: Sear marinated chicken in a skillet over medium-high heat for about 6-7 minutes per side until golden brown and cooked through.
  3. Prepare the Rice: Boil chicken broth in a pot. Add rinsed rice and simmer until fluffy (15-20 minutes), stirring occasionally.
  4. Make the Green Sauce: Blend cilantro, garlic, green chili peppers, olive oil, lime juice, salt, and pepper until smooth.
