Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup strawberries, pureed
  • 1 cup blueberries, pureed
  • Popsicle molds

Instructions

  1. Beat softened cream cheese in a bowl until fluffy. Mix in sugar and vanilla until smooth.
  2. In another bowl, whip heavy cream to soft peaks. Gently fold into the cheesecake mixture.
  3. Puree strawberries and blueberries in separate bowls.
  4. Layer cheesecake mixture and fruit purees in popsicle molds until full.
  5. Insert sticks and freeze for 4-6 hours until solid.
  6. To serve, run warm water over molds for easy release.
